Old Bay Smoked Cheddar Biscuits
2-1/2- cups self-rising flour
1- stick of really cold butter, grated
1-c-cold buttermilk
1-7oz block smoked cheddar cheese, grated
1-tsp garlic powder
1-1/2 tsp Old Bay seasoning
Butter mixture for after baking: 4 TBSP of butter melted, 1/2 tsp each garlic powder and old bay seasoning. Mix to combine.
Preheat your oven to 400, and line a baking sheet with parchment paper. In a large bowl, add your self-rising flour, garlic powder and old bay seasoning. Then add in the grated cheese and stir. Add in your grated butter and stir to coat the butter in the flour. Now add in the buttermilk and mix to form a shaggy dough. Place the dough on a lightly floured surface and knead just a couple of times to make the dough come together. Ok, now you can pat the dough out and fold it over on to itself several times. This is what forms the biscuit layers. Repeat the process of patting out the dough and folding about 3-4 times. Then pat out once more and use a 3” round biscuit cutter to cut out the biscuits. Place them onto your lined baking sheet. Bake for 14-16 minutes or until the tops are lightly golden brown. Once they’re done baking, remove from the oven and brush with melted butter mixture. Let them cool on the baking sheet about 5 minutes before serving. Enjoy!
