Bacon Cheddar Biscuits

2-1/2- cups self-rising flour
1- stick of really cold butter, grated
1-c-cold buttermilk
8-slices of bacon, cooked and crumbled
1-7oz block cheddar cheese, grated
4-5 green onions, chopped fine
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine self-rising flour, grated butter, and buttermilk. Mix until it forms a shaggy dough.
Transfer the dough to a lightly floured surface and knead it gently just a couple of times to bring it together.
Pat the dough out flat.
Add crumbled bacon, grated cheese, and green onions to the dough, then begin kneading to incorporate all the ingredients.
Once everything is well mixed, pat the dough out again and fold it over onto itself several times to create layers.
Repeat the patting and folding process 3-4 times to ensure the layers form well.
After the final folding, pat the dough out one last time to your desired thickness.
Use a 3-inch round biscuit cutter to cut out the biscuits from the dough.
Place the cut biscuits onto the prepared baking sheet and brush the tops with buttermilk.
Bake in the preheated oven for 14-16 minutes or until the tops are lightly golden brown.
Allow the biscuits to cool on the baking sheet for about 5 minutes before serving.
