Chocolate Biscuits
Try my Chocolate Buttermilk Biscuits, a sweet take on a Southern favorite. These soft biscuits have a deep chocolate taste and a hint of tangy buttermilk. Enjoy them warm with jam or whipped cream. Mel's Chocolate Biscuits
1-1/4 cups self-rising flour
1/4 cup cocoa powder
1/4 cup brown sugar
1/4 tsp salt
1/2 stick butter, grated and cold
1/2 cup cold buttermilk
1/2 tsp vanilla extract or paste
1/4 cup mini chocolate chips
Melted butter, about 2 TBSP, for brushing the tops of the biscuits
About 2 TBSP powdered sugar for dusting the biscuits
Strawberries and whipped cream
Preheat oven to 400 degrees & line a baking sheet with parchment paper.
Combine flour, cocoa powder, brown sugar, salt and mini chocolate chips in a large bowl. Then add in your cold, grated butter and toss to combine.
Make a well in the flour and add buttermilk and vanilla and stir until your dough starts to come together.
Turn out dough onto lightly floured surface and gently knead, adding additional flour until no longer sticky.
Remember to do your pat and folds, then pat dough to an even 1/2" thickness.
Cut into biscuits with a round cutter, mine was 2" diameter.
Place biscuits onto a parchment lined baking sheet.
Bake 14-16 minutes.
Remove and brush with melted butter and then dust with powdered sugar.
These are delicious on their own, but I made them into a strawberry shortcake with fresh sliced strawberries and whipped cream.
