The Best Corn Dip

Sweet corn, lots of cheese, and a kick of jalapeño come together in this easy, crowd pleasing dip. Whether you’re hosting a party, lounging by the pool, or gathering friends for game night, this bowl always gets scraped clean.

The Best Corn Dip

1-8oz- block softened cream cheese 

1-c-mayo

3-c-shredded cheese, I use Colby Jack

1-4oz-jar, diced pimentos, drained

2-cans-14.75oz each-Southwest style corn or Mexicorn, drained

4-green onions, chopped

3-TBSP-chopped pickled jalapeños

1-TBSP-garlic powder

Add the cream cheese, mayo and garlic powder to a large bowl and stir to combine.  Add the corn, pimentos, jalapeños, and green onions and mix well.  Then add shredded cheese and stir to mix everything together.  Cover and refrigerate 4-6 hours or overnight.   When ready to serve, place on serving bowl of your choice and top with a little cheese, a few chopped green onions and a couple of slices of those pickled jalapeños.  Serve with your favorite chips, I like corn chips with this, and enjoy!!
