Corn & Black Bean Salsa
Sweet corn, sassy spice and a whole lotta confidence, This salsa shows up like it owns the snack table - and honestly, it does. Make sure you make a double batch, this disappears so fast!!
1- can corn, drained
1- can black beans, drained and rinsed
2-3 roasted red bell peppers, drained and chopped
1-2 TBSP, pickled jalapeños, chopped
Small bunch of cilantro, chopped fine, you only need a couple of TBSP
1- tsp cumin
1- tsp minced garlic
1/2 tsp onion powder
1 tsp salt
1/2 tsp pepper
1-2 tsp lime juice
Add all ingredients to a large bowl and mix to combine. Cover and refrigerate for a couple of hours to let flavors get to know each other. Serve with your favorite chip and enjoy!!
