Peppermint Bark
This Peppermint Bark tastes like every Christmas I grew up with - rich chocolate, cool peppermint and that familiar candy cane crackle that always meant the season had truly arrived. And if you wander through my kitchen and grab a piece, I’ll just smile, because some traditions are too sweet to break.
Peppermint Bark
1- 12 oz bag of semi-sweet chocolate chips
2- 12 oz each- bags of white chocolate chips
12 candy canes, unwrapped
1- tsp peppermint extract
Line a cookie sheet with wax paper.
Melt the semi-sweet chips in the microwave, using 30 second intervals, stirring after each interval, until melted and smooth. Pour onto prepared cookie sheet and use an off set spatula to spread evenly. Place in fridge for about an hour.
Place all unwrapped candy canes in a gallon size zip top bag and using a small mallet or rolling pin, crush until fine. Set aside.
Melt white chocolate in microwave the same way we melted the semi-sweet. When totally melted and smooth, pour in crushed candy canes and peppermint extract and stir to combine. Remove chocolate from fridge and pour white chocolate mixture on top and use an off set spatula to spread over the semi-sweet chocolate evenly. Place back in the fridge and let set about 2 hours or until completely firm. Remove from fridge and remove from cookie sheet. Peel off wax paper and break into bite size pieces. Keep in airtight container in the fridge. Y’all this stuff is good!! Enjoy!!
