Strawberry Lemon Biscuits

Savor spring with my Strawberry Lemon Biscuits drizzled with lemon glaze. Bursting with fresh strawberries for sweetness and tangy lemon zest for a refreshing kick, each bite is fluffy and melts in your mouth. Ideal for an afternoon snack or the perfect dessert —this delicious treat is sure to become your favorite!

2-1/2-c-self-rising flour plus about 1/2 cup more for shaping the dough, so it’s not sticky

2-TBSP-granulated sugar 

1- stick of cold butter, grated 

1-c-chilled buttermilk plus 2-3 TBSP to brush on tops before baking

1-c-diced strawberries 

Zest of 1 lemon 

Lemon icing:

1-c-powdered sugar 

1-2-TBSP-milk

1-TBSP-lemon juice 

Zest of 1 lemon

-Preheat oven to 425 degrees and line a baking sheet with parchment paper.

-Combine flour, sugar, strawberries and lemon zest  in a large bowl.  Then add in your cold, grated butter and toss to combine.  

-Make a well in the flour and add buttermilk and stir until your dough starts to come together. 

-Turn out dough onto lightly floured surface and gently knead, adding additional flour until no longer sticky. 

-Remember to do your pat and folds, then pat dough to an even 1/2” thickness. 

-Cut into biscuits with a round cutter, mine was 3” diameter. 

-Place biscuits onto a parchment lined baking sheet and brush the tops with buttermilk.  

-Bake 15-18 minutes.  

-Remove and brush with melted butter  

-Combine all the icing ingredients, and then drizzle over the biscuits.  Serve and enjoy!!
