Marinated Cucumbers
These marinated cucumbers are cool, crisp, and full of bright flavor - the kind of easy little dish that reminds me of warm summer evenings on the porch when something simple hits just right.
Marinated Cucumbers
1-lb-mini, cucumbers
3-tsp-low sodium soy sauce
2-tsp-Rice Vinegar
1/2-tsp-crushed red pepper flakes
1-tsp-Toasted Sesame Oil
1-tsp- your favorite honey, I used salted honey
1-tsp-ginger paste
1-tsp-minced garlic, fresh or jarred
2-green onions finely chopped
1-TBSP-Korean Gochujang
2-tsp-sesame seeds
Thinly slice the cucumbers and add them to a large bowl. In a separate bowl add the soy sauce, rice vinegar, red pepper flakes, sesame oil, honey, ginger paste, garlic, green onions, and Gochujang. Give that a good mix and pour over the cucumbers. Add sesame seeds and then mix so that all the cucumbers are coated. Cover and refrigerate for a few hours or overnight. Then you’re ready to serve as a snack or a refreshing side! Enjoy!!
