Mel’s Favorite Brownies
Dense, fudgy chocolate brownies with crackly tops and gooey centers. Made from simple pantry staples and vanilla, they bake up indulgent and warm, perfect with ice cream or cool them down to cut and store. Classic, comforting, and irresistible, perfect to share (or not, I won’t tell).
Mel’s Favorite Brownies
1-c all-purpose flour
2/3-c cocoa powder
1/2 tsp baking powder
1/2 tsp salt
1 c butter, room temp
1 c granulated sugar
1 c brown sugar
2 tsp vanilla extract
4 eggs at room temp
1-1/2 c semi-sweet chocolate chips
Preheat oven to 350 and line a 9x13 pan with parchment paper and set aside.
In a medium bowl, sift together the flour, cocoa powder, baking powder and salt. Set aside.
In a small saucepan over medium low heat, add the butter and let it melt. Once melted, remove from heat and let cool about 5 minutes.
In a large bowl, add the granulated sugar and brown sugar, then add the melted butter and whisk to combine. Add eggs, one at a time, whisking after each addition. Add vanilla extract and whisk again. Stir in dry ingredients, then fold in chocolate chips. Add the batter to your prepared pan and bake for 28-32 minutes or until a toothpick inserted into the center comes out mostly clean. Let cool completely before removing from the pan, peeling off the parchment, slicing and serving. Store any leftover brownies, there probably won’t be any, in an airtight container.
