Chocolate Mint Cookies
These cookies mix chocolate and mint for a tasty Christmas snack! The rich chocolate and fresh mint create a delicious flavor. Each bite has a nice crunch and a soft center. 2-1/2-c- all purpose flour
1/3- c- cocoa powder
1-tsp-baking soda
1-tsp-cornstarch
1/2-tsp-salt
1-c- 2 sticks butter, softened
3/4-c- granulated sugar
3/4-c- brown sugar
1-tsp- vanilla extract
2-eggs
1 bag(9oz) mint flavored M&M candies
1 bag (11 oz) mint chocolate baking pieces, or about 2 cups chopped up Andes Mints
Preheat oven to 375.
Stir together flour, cocoa, baking soda, cornstarch and salt. Beat butter, granulated sugar and brown sugar together in a large bowl until creamy. Add eggs and vanilla and beat well. Gradually add flour mixture, beating well. Stir in the mint baking pieces and mint M&M’s. Using a 2 TBSP scoop, portion out cookies on to your baking sheet and top with extra M&M’s. Then bake 2-3 inches apart for 10-12 minutes or until set. As soon as you remove them from the oven, you can add some of the mint chocolate baking pieces if desired. Cool on cookie sheets about 5 minutes then move to cooling rack to cool completely. Makes about 2 dozen cookies. Enjoy!
