Peanut Butter, Banana and Bacon Cookies

I grew up listening to Elvis and watching all of his movies with my mom. I recently found out that his favorite sandwich was a peanut butter, banana and bacon sandwich. So I decided to take those yummy flavors and make them into this amazing cookie, fit for the King himself! Y’all are going to love this one, Enjoy!!

1- cup butter, very soft

1 cup creamy peanut butter

1 medium banana, mashed up really well

1 cup granulated sugar

1 cup brown sugar

2 large eggs

2 tsp vanilla extract

2-1/3 cup all purpose flour

1 cup bread flour

1 TBSP cornstarch

1/2 tsp baking powder

1/2 tsp baking soda

1 tsp bacon flavored sea salt

Add ins: 

1 cup mini semi-sweet chocolate chips

1 cup milk chocolate chips

1 cup peanut butter chips

1/2 cup chopped banana chips

1/2 cup crumbled bacon, yes, bacon, trust me


Start by cutting up about 6 slices of bacon into small pieces and cook them until nice and crispy.  Then drain the pieces on some paper towels while you make the dough.  

In a medium bowl, mix together the flours, cornstarch, baking powder, baking soda and bacon flavored salt.  Set that aside.  Then in another bowl, mix together the mini chocolate chips, milk chocolate chips and peanut butter chips.  Then measure out 1 cup to use in the dough, but save the remaining, you’ll use those on the tops of the cookies.  Ok, now for the dough.  In a large bowl beat together the butter, peanut butter, mashed banana, granulated sugar and brown sugar until light and fluffy, this takes about 3-4 minutes.  Scrape down the sides of your bowl, then add the eggs and vanilla and mix until combined.  Then with your mixer on low, slowly add the flour mixture to the butter mixture until it’s all combined.  Stir in the cup of mixed chips, the chopped banana chips and the bacon pieces.  Once everything is all mixed up, scoop out the dough using a 2 TBSP scoop, and place the dough onto a parchment lined baking sheet.  Once all the dough is scooped out, place them in the fridge for about an hour to firm up a little.  This dough is really soft.   After an hour, remove the tray from the fridge.  Place the remaining mixed chocolate chips onto a plate and one by one, place just the tops of the cookies onto the plate of mixed chips, and press down a little so they stick.  Now you should have all the different chocolate and peanut butter chips on the tops of the cookies.  You can also add extra bacon pieces and banana chips if desired.  After you top all the cookies, place them back in the fridge for at least 4 hours, but overnight is better.  When you’re ready to bake, preheat the oven to 350 degrees and line 2 baking sheets with parchment paper.  Place the dough balls on the baking sheets about 2 inches apart.  I usually bake 5 cookies at a time.  Bake the cookies for 13-15 minutes.  When the cookies come out of the oven, sprinkle with some of that yummy bacon sea salt.  Let the cookies cool about 5-7 minutes on the baking sheet and then move them to a cooling rack to cool completely.  Store in an airtight container.  Makes about 2 dozen cookies.
